The black oboro kelp is made by scraping the surface of carefully selected kelp from Hokkaido, focusing on the dark skin part.
There is a theory that the umami of kelp is contained in the area around the skin, so this is the best oboro kelp for soup.
The flavor of kelp is overwhelmingly stronger than that of thick white oboro.
It is delicious wrapped around a rice ball or on rice as it is. It is also delicious as soup with a handful of black oboro and soy sauce in a bowl.
