Description

Miyagi Sasanishiki

Rare, Refined Rice Preserved by Master Grower Seiichi Asano

Seiichi Asano (浅野清一) is a highly regarded producer of Miyagi-grown Sasanishiki, cultivating this increasingly rare variety in the Matsukura area of Miyagi Prefecture, near present-day Ōsaki City. At a time when Sasanishiki has nearly disappeared from mainstream production, Asano’s work represents a deliberate effort to preserve one of Japan’s most important culinary rice.

Sasanishiki is prized not for richness or stickiness, but for clarity, elegance, and balance—qualities that make it indispensable in traditional Japanese cuisine, especially sushi.

The Rice: Sasanishiki (ササニシキ)

Sasanishiki was once one of Japan’s most widely grown premium rices, particularly in Miyagi. Its defining characteristics are:

  • Low stickiness

  • Clean, dry mouthfeel

  • Subtle sweetness

  • Excellent grain separation

Unlike modern sticky varieties, Sasanishiki allows flavors of fish, vinegar, dashi, and seasonal ingredients to remain distinct.

Why Sasanishiki Became Rare

From the 1990s onward, Sasanishiki cultivation declined sharply due to:

  • Vulnerability to cold-weather damage

  • Susceptibility to disease

  • Lower yields compared to newer varieties

As a result, many farmers shifted to hardier cultivars. Today, only a small number of dedicated growers in Miyagi continue to produce true Sasanishiki, making it a connoisseur’s rice.

The Producer: Seiichi Asano (浅野清一)

  • Region: Matsukura area, Miyagi Prefecture

  • Focus: Preserving traditional Sasanishiki cultivation

  • Reputation: Known among rice specialists and professional buyers

Asano’s Sasanishiki has been handled and distributed by respected specialty rice merchants, including the rice factory, indicating recognition at a professional and international level.

His work exemplifies:

  • Careful field management

  • Respect for traditional varietal characteristics

  • Commitment to taste over yield

Taste & Texture Profile

  • Very low stickiness

  • Light, crisp bite

  • Clean, neutral sweetness

  • Excellent aroma restraint

  • Sharp grain definition

This is rice that disappears politely on the palate, allowing accompanying ingredients to shine.

Ideal Uses

Sasanishiki is especially suited for:

  • Sushi and chirashi

  • Traditional washoku

  • Kaiseki cuisine

  • Meals where balance and restraint matter

It is not designed for those seeking rich sweetness or mochi-like texture.

Sasanishiki vs. Modern Premium Rice

Sasanishiki Modern Sticky Varieties
Stickiness Very low Medium–high
Flavor Clean, subtle Sweet, rich
Grain separation Excellent Moderate
Best use Sushi, washoku Everyday meals

Sasanishiki represents a different philosophy of deliciousness.

Cultural Importance

Sasanishiki is deeply tied to Miyagi’s food culture and was historically favored by sushi chefs nationwide. Producers like Seiichi Asano are not simply growing rice—they are preserving a culinary standard that might otherwise be lost.

Our Commitment to Trust

We highlight producers such as Seiichi Asano because trust in rice comes from:

  • Clear producer identity

  • Verifiable regional heritage

  • Respect for varietal integrity

This is rice with history, intention, and purpose—grown not for trend, but for tradition.

If you seek a refined, honest rice that elevates Japanese cuisine through balance rather than richness, Miyagi Sasanishiki by Seiichi Asano is a rare and meaningful choice.
Quiet flavor. Sharp structure. Enduring craftsmanship.

Japanese rice is short-grain rice. "Hakumai," Japanese white rice, is milled to remove the rice bran from the brown rice, known as "Genmai".

"Butsuki-mai" is partially milled rice, named after how much of the bran has been removed from the brown rice.

The nutritional value of bran is retained by adjusting the ratio of milled rice:

  • 30% milled rice: 30% of the bran has been removed.
  • 50% milled rice: 50% of the bran has been removed.
  • 70% milled rice: 70% of the bran has been removed.
How to Cook White Rice & Partially Milled Rice
Instructions:
  1. Measure the rice.

Japanese brown rice, also known as “Genmai,” is short-grain brown rice.

Brown rice retains the bran and germ intact, making it rich in vitamins, minerals, and fiber. It is less sticky than white rice, has a nutty flavor, and subtle sweetness.

How to Cook Brown Rice and Cooking Tips
Cooking tips and steps:
