Description

Nagano Shirake Mochi Rice(長野・白毛もち)

Ancient Glutinous Rice from Hase, Ina — Pure Stretch, Deep Sweetness

Nagano Shirake Mochi (白毛もち) is a rare, ancient glutinous rice cultivated by the rice farm Hase, an agricultural producer located in Hase, Ina City, Nagano Prefecture. Grown at an elevation of approximately 1,000 meters, this rice is nurtured in a cool mountain climate with dramatic day–night temperature differences—conditions ideal for developing depth of flavor and natural strength.

This is not a modern improved variety. Shirake Mochi is an unbred ancient rice, preserved only in small parts of the Kami-Ina region, and rarely encountered in ordinary retail markets.

About the Producer — the rice farm Hase

the rice farm Hase is an agricultural production corporation based in Ichinose, Hase, Ina City, committed to:

  • Natural farming (自然栽培)
    – no pesticides
    – no chemical fertilizers

  • Rice cultivation that supports biodiversity and soil vitality

  • Building a sustainable agricultural model in mountain villages

Surrounded by rich ecosystems and clean alpine water, the farm grows rice slowly and carefully, allowing each variety to express its natural character.
Current activities and philosophy are shared openly on their official website.

Natural Farming Philosophy(自然栽培)

Shirake Mochi is grown without forcing inputs:

  • No agricultural chemicals

  • No artificial fertilizers

Instead, the rice farm Hase relies on:

  • Mountain spring and snowmelt water

  • Living, biologically active soil

  • The natural rhythm of the land

This patient approach is essential for ancient varieties like Shirake Mochi, whose qualities emerge only when grown with restraint.

About Shirake Mochi Rice(白毛もち)

  • A non-hybrid ancient glutinous rice

  • Cultivated only in limited areas of Nagano’s Kami-Ina region

  • Preserved as a living heritage variety

Taste & Texture

  • Deep, natural sweetness

  • Rich, rounded flavor

  • Exceptional elasticity — famously “endlessly stretchy”

  • Reminiscent of traditional mochi made with mortar and pestle

The texture is soft yet powerful, delivering the true character of mochi rice.

Ideal Uses

  • Handmade mochi

  • Ozoni and seasonal rice cakes

  • Sekihan (red rice)

  • Traditional Japanese sweets

Our Commitment to Trust

We offer Nagano Shirake Mochi Rice from the rice farm Hase because it represents:

  • A clearly defined place and producer

  • Genuine natural cultivation

  • Preservation of a rare rice variety

This is not convenience rice.
This is rice grown to carry memory, culture, and flavor forward.

If you want to experience mochi as it once was—deeply sweet, endlessly elastic, and alive—Shirake Mochi stands apart.

Japanese rice is short-grain rice. "Hakumai," Japanese white rice, is milled to remove the rice bran from the brown rice, known as "Genmai".

"Butsuki-mai" is partially milled rice, named after how much of the bran has been removed from the brown rice.

The nutritional value of bran is retained by adjusting the ratio of milled rice:

  • 30% milled rice: 30% of the bran has been removed.
  • 50% milled rice: 50% of the bran has been removed.
  • 70% milled rice: 70% of the bran has been removed.
How to Cook White Rice & Partially Milled Rice
Instructions:
  1. Measure the rice.
    1. Level off the rice in the measuring cup.

    2. This removes any dust from the rice's surface and avoids being absorbed.

Japanese brown rice, also known as “Genmai,” is short-grain brown rice.

Brown rice retains the bran and germ intact, making it rich in vitamins, minerals, and fiber. It is less sticky than white rice, has a nutty flavor, and subtle sweetness.

How to Cook Brown Rice and Cooking Tips
Cooking tips and steps:
  1. Rub Gently
    1. Rub the brown rice gently while washing.
    2. It helps each rice grain absorb water, resulting in softer rice.
    3. Change the water and repeat washing for 1-2 minutes.
  2. Soak Longer
    1. Soak the rice longer than white rice, at least 2 hours.
    2. It allows to soak more moisture and maximize flavor.

    3. The water temperature rises gradually, it allows the rice to absorb moisture at a steady pace.
    4. Placing the rice in the refrigerator when presoaking also helps.
  3. Keep the lid on.
    1. Keep the lid on, let the steam cook the rice tender.
