Shibata Koshiibuki

Reliable, Everyday Niigata Rice from Shibata’s Kaji River Region

Koshiibuki from Shibata City, Niigata Prefecture is a highly regarded early-harvest rice variety that carries forward the best qualities of Koshihikari—gloss, gentle sweetness, and satisfying texture—while offering a lighter, cleaner finish and excellent value.

In particular, Koshiibuki grown along the Kaji River basin benefits from pristine mountain water and fertile soils, and is carefully marketed as “Kaji River Koshiibuki”, a trusted regional brand known for consistent quality and approachability.

This is rice designed for everyday excellence: dependable, versatile, and delicious whether freshly steamed or enjoyed hours later.

Why Shibata Koshiibuki Stands Out

🌾 Koshihikari Lineage, Refined Balance
Developed in Niigata Prefecture, Koshiibuki inherits Koshihikari’s:

  • Attractive gloss when cooked

  • Pleasant natural sweetness

  • Gentle stickiness

At the same time, it offers a firmer grain structure and lighter mouthfeel, making it easier to pair with a wide range of dishes.

💧 Kaji River Growing Environment
Shibata’s Kaji River region is nourished by clear water flowing from the mountains, including streams originating near Mt. Omine.

  • Clean, mineral-balanced water

  • Fertile alluvial soil

  • Stable growing conditions

These factors support rice with clear flavor, strong grain integrity, and reliable texture.

Taste & Texture Profile

  • Mild, refined sweetness

  • Moderate stickiness without heaviness

  • Firm, well-defined grains

  • Clean, refreshing finish

Compared to Koshihikari, Koshiibuki is slightly lighter and more straightforward, making it easy to enjoy every day without fatigue.

Excellent Even When Cool

Koshiibuki is especially valued for its performance after cooling:

  • Grains remain firm and pleasant

  • Flavor stays clean and balanced

  • Minimal stickiness loss over time

This makes it ideal for:

  • Bento boxes

  • Onigiri

  • Prepared meals

Versatile in the Kitchen

Thanks to its firm grain and mild flavor, Koshiibuki pairs well with:

  • Japanese home cooking

  • Western and Chinese dishes

  • Fried foods, sauces, and seasoned proteins

It complements meals without overpowering them.

Stable Quality, Honest Value

As an early-harvest variety, Koshiibuki is:

  • More resilient to weather fluctuations

  • Easier to cultivate consistently

  • Reliable in both quality and supply

These traits allow it to deliver excellent cost performance without sacrificing taste.

Who This Rice Is For

  • Those who enjoy Koshihikari but prefer a lighter finish

  • Customers looking for rice that stays good when cooled

  • Families who want dependable, everyday premium rice

  • Anyone seeking high-quality Niigata rice at a reasonable price

Our Commitment to Trust

We carry Shibata Koshiibuki because it represents what everyday rice should be:
clear origin, honest cultivation, stable quality, and excellent value.

This is rice you can rely on—day after day, meal after meal.

If you want the spirit of Koshihikari in a more versatile, approachable form, Koshiibuki is an outstanding choice.
Clean flavor. Firm grains. Everyday confidence.

Japanese rice is short-grain rice. "Hakumai," Japanese white rice, is milled to remove the rice bran from the brown rice, known as "Genmai".

"Butsuki-mai" is partially milled rice, named after how much of the bran has been removed from the brown rice.

The nutritional value of bran is retained by adjusting the ratio of milled rice:

  • 30% milled rice: 30% of the bran has been removed.
  • 50% milled rice: 50% of the bran has been removed.
  • 70% milled rice: 70% of the bran has been removed.
How to Cook White Rice & Partially Milled Rice
Instructions:
  1. Measure the rice.
    1. Level off the rice in the measuring cup.
    2. 1 rice measuring cup = 180ml/150g.
  2. Rinse the rice.
    1. Add water to the bowl and pour it out quickly.
    2. This removes any dust from the rice's surface and avoids being absorbed.
  3. Wash the rice.
    1. Gently wash the rice by stirring by hand with the water drained.
    2. Repeat 2-3 times.
    3. Drain the water with a strainer.

    5. Add water: 180-200 ml per 1 rice measuring cup.
  4. Presoak in water.
    1. Soak the rice in water for 30 minutes to allow it to absorb water.
    2. Rice will be tender and cooks evenly afterwards.

Japanese brown rice, also known as “Genmai,” is short-grain brown rice.

Brown rice retains the bran and germ intact, making it rich in vitamins, minerals, and fiber. It is less sticky than white rice, has a nutty flavor, and subtle sweetness.

How to Cook Brown Rice and Cooking Tips
Cooking tips and steps:
  1. Rub Gently
    1. Rub the brown rice gently while washing.
    2. It helps each rice grain absorb water, resulting in softer rice.
    3. Change the water and repeat washing for 1-2 minutes.
  2. Soak Longer
    1. Soak the rice longer than white rice, at least 2 hours.
    2. It allows to soak more moisture and maximize flavor.

Cook in a pot:
  1. Drain the water and remove it to a pot.
  2. Use cold water.
    1. Add water: 270 - 300ml per 1 rice measuring cup.
    2. Use cold water or water with ice cubes for cooking.
    3. The water temperature rises gradually, it allows the rice to absorb moisture at a steady pace.
    4. Placing the rice in the refrigerator when presoaking also helps.
  3. Keep the lid on.
    1. Keep the lid on, let the steam cook the rice tender.
  4. Start with medium heat to reach boiling (10-15 minutes).
  5. Once boiled, reduce the heat to low.
  6. Cook for 20 minutes on low heat, keeping the lid on.
  7. Turn off the heat.
  8. Remove the pot from the stove and steam for 10 minutes.
  9. Keep the lid on, never open.
  10. Carefully open the lid.
