100-Year Cedar Barrel Aged Traditional Miso

Traditionally crafted in 100-year-old cedar barrels, this rich and deeply flavorful miso is made with domestically sourced soybeans, Japanese rice, and natural sun-dried salt. Slowly aged for 1 to 1.5 years, the extended fermentation allows the soybeans, koji, and salt to fully harmonize, creating a mellow, well-rounded taste.

Compared to white miso, it has a slightly higher salt content, but the long aging process softens the sharpness and develops a bold depth of flavor and aroma. The result is a nostalgic, authentic miso with exceptional richness and character.
