Hattori Jozo Hokkaido Rice Koji 200g

Made with 100% premium rice from Hokkaido, Japan, Hattori Jozo’s dried rice koji is carefully crafted using traditional Japanese fermentation methods and gently dried to preserve its quality and convenience.

Perfect for making your own traditional Japanese fermented foods at home, this versatile rice koji can be used to prepare amazake, shio koji, homemade pickles, and more. The dried format allows you to enjoy koji throughout the year without worrying about seasonal availability. It is ready to use straight from the package, with no need to break apart or loosen the koji before use.

Hattori Jozo takes pride in using carefully selected Hokkaido ingredients and traditional production techniques. This product is registered under the Hokkaido Government’s Hokkaido-Sourced Ingredient Registration System, which recognizes processed foods made in Hokkaido using locally produced ingredients and meeting the program’s quality standards.

Each bag contains 200g of dried rice koji. For the best quality, store in a cool, dry place away from direct sunlight, heat, and humidity. While dried koji can generally be stored at room temperature, prolonged exposure to high temperatures may cause discoloration or a sour taste. Refrigeration or freezing is recommended, especially in warm climates.
