Inochi no Ichi (いのちの壱)

Premium rice from Hida with grain size, sweetness, and presence

Inochi no Ichi is a rare rice variety from Gifu Prefecture, discovered in 2000. The grains are about 1.5 times larger than Koshihikari—you can actually see and feel the difference. When cooked, they turn translucent and glossy, with a sweetness that really spreads across your palate.

We source ours from Hida in Gifu prefecture, where the elevation, cold mountain water, and sharp temperature swings between day and night help the rice grow bigger while keeping its sweetness concentrated. It's a terroir thing—Hida-grown Inochi no Ichi just hits differently.
