Ginjo Miso "Smooth"

Crafted in Niigata using locally grown rice and soybeans, this premium Echigo sweet miso reflects a dedication to quality and tradition. Combined with sun dried salt, it develops a rich umami depth with a gentle sweetness and smooth, mellow character.

The flavor is mild yet satisfying, making it suitable for a wide range of dishes from classic miso soup to sauces and marinades. Its strained texture offers a clean, velvety consistency without visible grains, ensuring ease of use and a polished finish in every dish.

Previously available only as a coarse grain Ginjo style miso, this smooth strained version was created in response to strong customer demand, offering the same depth of flavor in a more refined and versatile form.

The darkening of miso color occurs due to the Maillard reaction, which progresses during aging and fermentation. It is generally safe to consume as is, with no issues regarding quality or safety. However, please note that the flavor may change over time, resulting in increased sourness or bitterness. After purchase, we recommend storing it in the refrigerator or freezer.
