A concentrated Japanese Dashi seasoning made from carefully selected natural ingredients and no soy sauce.
Enjoy the pure taste of Japanese Dashi.
This additive-free Shiro (White) Dashi is crafted using Maekawa's proprietary Nikama Dashi® method, which concentrates the natural umami and aroma of carefully selected Japanese ingredients into a rich liquid seasoning.
Unlike many conventional white dashi products, this recipe contains no white soy sauce. Instead, it relies entirely on the deep flavor of natural dashi made from dried sardines, flying fish, kombu kelp, dried shiitake mushrooms, and sardine flakes. The result is a clean, elegant broth with exceptional depth and versatility.
Seasoned only with Akō sea salt and Kikaijima raw sugar, this white dashi delivers balanced umami, gentle sweetness, and a refined finish without artificial additives, protein hydrolysates, or yeast extracts.
A small amount goes a long way, making it perfect for soups, simmered dishes, noodle broths, chawanmushi, hot pots, and everyday Japanese cooking.
