[RECIPE] Furikake
Furikake is a crunchy, Umami-rich Japanese seasoning typically made with seaweed, sesame seeds, and other flavorful ingredients. It’s often sprinkled over hot steamed rice or mixed into Onigiri (rice balls). This recipe offers a soft-style Furikake that’s easy to make at home, using nutritious ingredients like turnip greens, Shirasu (baby sardines), and Yuzu. It's a delicious and hearty addition to your meals.

Ingredients:
- 2-3 pieces Turnip green top
- 1 tsp Salt
- 1 cup Shirasu (baby sardines)
- 2 slices Ginger
- 1 tbsp Sesame Oil
- 1 tbsp Soy Sauce
- 2 tbsp Sesame Seeds
- 2 tbsp Yuzu Juice
- 1 pack Katsuobushi (bonito flakes)
- Yuzu Shichimi Pepper
Instructions:
- Prepare the turnip greens
Rinse the green tops thoroughly and chop them into small pieces. Rub with salt, let sit for 5 minutes, then squeeze out excess water. Pat dry with paper towels.
- Chop the ginger
Cut the ginger into fine pieces.
- Cook the Shirasu and ginger
Heat a frying pan over medium heat. Add sesame oil, Shirasu, and ginger, and stir-fry until the fish turns golden and crispy.
- Add the greens
Stir in the prepared turnip greens and cook until they soften.
- Season the Furikake
Add Katsuobushi, sesame seeds, soy sauce, Yuzu juice, and Yuzu Shichimi pepper. Stir continuously until the liquid evaporates.
- Serve and enjoy
Sprinkle the Furikake over freshly cooked rice and enjoy!
