Traditional Japanese Coarse Salt with Natural Nigari

A traditional coarse salt from Ako, Japan, preserved since the Edo period and loved for generations. Made by heating and blending Australian solar salt with natural nigari, this unrefined salt retains naturally occurring minerals, including 550 mg of magnesium per 100 g.

The Australian solar salt is made from pristine seawater concentrated by the power of the sun and nature. The resulting salt is carefully processed to deliver a rich, natural flavor while preserving the qualities of traditional Ako salt.

Research has shown that when this salt is used for pickling, the ripening process and levels of fermented components such as lactic acid, acetic acid, and glutamic acid can be more than three times higher compared with other salted pickles.

With its mineral-rich composition and traditional Japanese character, this coarse salt is an excellent choice for pickling, fermentation, cooking, and bringing depth and balance to everyday dishes.
