The black glutinous rice has an anthocyanin pigment (a kind of polyphenol) as the purple pigment in the seed coat. It has a sweet scent, and the more it chews, the more the fragrance spreads, and you can enjoy a fluffy texture.
In red rice and red glutinous rice, the red pigment in the seed coat is a catechol/tannin pigment (a kind of polyphenol). The taste is light and easy to eat, with a slight sweetness. With a fluffy texture, the more you chew, the more the fragrance spreads.
The green pigment in the seed coat of green rice is chlorophyll.
It has a sweet scent, and the more it chews, the more the fragrance spreads, and you can enjoy a fluffy texture.
You can easily cook light pink rice with black, red and green sprinkled on it by mixing 20% of white rice and cooking. It's chewy even when it's cold, and its beautiful color makes it ideal for rice balls and bento.
