[RECIPE] Salmon and Mushrooms Mixed Rice
Takikomi Gohan is a Japanese mixed rice dish with a variety of ingredients. This salmon and mushrooms mixed rice is packed with protein and umami-rich mushrooms, making it perfect for a simple meal.

Ingredients:
- 2 cups Rice
- 400 ml water
[Mixing ingredients]
- 1/2 pack Shimeji
- 2 small King Oyster Mushrooms
- 1/2 pack Enoki
- 2 pieces Dried Shiitake (rehydrated in water) (Sugimoto Dried Shiitake)
- 4 oz Salmon fillet
- Salt (Shiomaru Blue)
[Seasoning]
- 2 tbsp Dashi Soy Sauce (Yamaroku Dashi Soy Sauce Kikutsuyu) or Mentsuyu
- 1 tbsp Sake
- 1 tbsp Mirin
Instructions:
- Add dried Shiitake to a cup of water to rehydrate the mushrooms for 15-20 minutes, then cut into small strips.
- Cut off the stems of the remaining mushrooms and separate them into small clusters.
- Season the salmon with a sprinkle of salt.
- Wash the rice and place it in the cooker pot, then add water.
- Add the prepared mushrooms and salmon to the rice, then pour in the Dashi soy sauce, Sake, and Mirin.
- Cook the rice using the "mixed rice" mode if available, otherwise, cook it as regular rice.
- Once cooked, stir quickly to mix the rice and ingredients evenly.
