[RECIPE] Okowa Rice

Okowa is a traditional Japanese sticky rice dish that's full of flavor and perfect for any occasion. This recipe simplifies the process by using Japanese short grain rice and adding a piece of mochi for extra stickiness. With the rich flavors of chicken, root vegetables, and a dashi-infused broth, it's an easy and hearty dish your whole family will love.

Ingredients:

 

    Instructions:

    1. Prepare the Ingredients
      1. Cut Mochi into small pieces.
      2. Dice the chicken thigh and season with some salt
      3. Shave cut the burdock root into thin slices and soak in water for 5 minutes to remove bitterness.
      4. Chop the Shiitake mushrooms, julienne the carrot, and cut konjac into small pieces.  
    2. Prepare the Rice Rinse the uncooked rice thoroughly until the water runs clear. Drain well and transfer it to a rice cooker or a cooking pot. 
    3. Combine Flavors Add Dashi powder, Sake, Mirin, soy sauce, a pinch of salt, and water to the rice cooker or pot. Stir to combine. Place the prepared mochi pieces, chicken, carrots, burdock root, Shiitake, and konjac on top of the rice. 
    4. Cook the Rice
      1. If using a rice cooker, select the "mixed rice" mode.
      2. If cooking on the stove, bring the mixture to a boil, then lower the heat, and simmer for 15-20 minutes.
      3. Let the rice rest for 10 minutes, then gently fluff and mix all the ingredients.
