[RECIPE] Strawberry Rose Mochi
Strawberry Mochi, also known as Ichigo Daifuku, is a delightful Japanese dessert that combines the sweetness of strawberries with sweet bean paste, all encased in soft and chewy mochi. By using Dango flour made from glutinous rice, you can easily recreate this treat at home. And by adding the rose syrup, you may enjoy a burst of fresh, fruity and a hint of rose flavor in every bite.

Ingredients:
- 1 cup Dango Flour
- 2 tbsp Sugar
- 1/2 cup Water
- 2/3 cup White Bean Paste (How to make Shiro-an)
- 6 pcs Strawberry
- 2 tbsp Rose Syrup
- 2-3 tbsp Potato Starch
Instructions:
- Prepare the Strawberries: Rinse the strawberries thoroughly and remove their stems.
- Prepare the Filling: In a small bowl, mix the white bean paste with rose syrup. Roll the mixture into 6 equal-sized balls and set aside. Check the recipe of the bean paste (How to make Shiro-an)
- Make the Mochi Dough: In a microwave-safe bowl, mix the Dango flour, sugar, and water until smooth. Microwave the mixture for about 5 minutes. Remove the wrap and stir well.
- Add a few drops of rose syrup, and knead the dough until it becomes smooth and pliable. (we suggest to knead in a mortar with a pestle)
- Divide and Shape the Mochi: Dust a tray with potato starch to prevent sticking. Place the mochi dough on the tray and divide it into 6 equal portions. Roll each portion into a ball.
- Assemble the Strawberry Mochi: Flatten each mochi ball into a palm-sized circle. Place a bean paste ball in the center, wrap it with the mochi dough, and seal the edges.
- Using a sharp knife, gently cut a small slit in the center of the mochi and insert a strawberry into it.
