[RECIPE] Red Bean Porridge
This comforting Red Bean Porridge is gently sweet and aromatic, making it perfect for warming the body in the winter time. In Japanese tradition, Azuki Gayu, or Red Bean Porridge is often enjoyed at the start of the year to ward off negative energy, and wish for good health throughout the coming months.

Recipe:

Ingredients:
- 1/2 cup Uncooked Rice (Rice Options)
- 1/2 cup Azuki Red Beans
- 1 pinch Salt
- Salted Kombu Kelp
- Mochi
Instructions:
- Rinse the red beans thoroughly and place them in a pot with 3 cups of water. Bring to a boil, then drain.
- Return the beans to the pot, add another 3 cups of water, and bring to a boil again. Reduce to low heat and simmer for 30 minutes.
- Taste a bean to ensure it's cooked through (it doesn’t need to be fully soft yet). Drain the beans, reserving the cooking liquid, and set them aside.
- Rinse the rice gently under cold water and add it to a pot.
- Measure the reserved liquid and add enough water to make a total of 4 cups. Pour this into the pot with the rice.
- Bring the mixture to a boil, then add the cooked red beans. Lower the heat, cover the pot with the lid slightly open, and simmer for about 30 minutes.
- Once the rice is fully cooked, stire in the salt.
- Serve topped with Salted Kombu and grilled Mochi, if desired.
