[RECIPE] Teriyaki Chicken Don

Ingredients:
- 2 cups Cooked Rice (Rice Options)
- 1/2 lb Chicken thigh
- 2 pcs Scallion
- Cooking oil
- Salt

- Mayonnaise
- Boiled eggs
Instructions:
- Prepare freshly steamed rice. (See how to cook rice)
- Boil the eggs - add eggs in boiling water and cook for 8 minutes for soft-boiled eggs.
- Slice the scallions for garnish.
- Cut chicken thighs into bite-sized pieces and lightly season with salt.
- In a hot frying pan, heat a little cooking oil. Sear the chicken pieces for about 2 minutes on the skin side, flip the meat, then cover with a lid and cook for another 3-4 minutes.
- Add scallions, sake, mirin, soy sauce, and sugar into the pan, letting the chicken simmer until the sauce thickens and coats the chicken.
- Add rice to a serving bowl, add some teriyaki sauce on the rice, top with the teriyaki chicken, drizzle mayonnaise, then add the soft-boiled egg for a delicious finishing touch.
