[RECIPE] Vegetable Tenshin-Don

Tenshin-don or Tenshin-han is a Chinese-inspired Japanese dish, traditionally combining a crab meat omlette with cooked rice and a savory sauce served in a bowl. Our version features a vegetable-based sauce using dried carrot and spinach. The natural umami flavor from the vegetable dashi adds a delightful touch, transforming this dish in a nourishing and comforting meal.

        Instructions:

          1. Cook the rice to prepare. (See how to cook rice
          2. In a pot, add water, vegetable dashi pack, dried carrot, and dried spinach, and bring to a boil. Remove the dashi pack after a few minutes. 
          3. Stire in soy sauce and mirin. 
          4. In a small bowl, mix the potato starch with water, then add this slurry to the sauce and stire until it thickens. 
          5. Heat a frying pan over mdeium-low heat with cooking oil. Pour the beaten eggs and cook until you have a round, flat omlette. 
          6. Place the cooked rice in a bowl, shaping it into a dome. Cover the rice with the omlette, then pour the sauce over the top.
